30 Days of Coffee: Day 28 - Sightglass and Coffee Collective

The 30 Days of Coffee is drawing to a close here this week, so I have taken the liberty of drinking a little more coffee today to have some more stories to tell. It’s a hard sacrifice to make, but I’m willing to make it.

This morning I spent a good bit of time down at Onyx Coffee Bar, meeting with a couple of friends and tasting some good coffees from Sightglass Coffee and Denmark’s Coffee Collective (i.e. fancy coffee). The first cup was Sightglass Coffee’s Kenyan Nyeri AA Kiandu, brewed on pourover. Continuing my tour of Sightglass’ fabulous coffees, this was a tasty, fruity cup. We picked out flavors of blueberry and blood orange. It has a milder fruit punch profile than some of the other Kenyans I’ve recently tried, a bit more balanced and complex (which I’m not complaining about!). Once again, I realize that Sightglass is making some excellent coffees.

Next up, I had my very first cup of Aeropress brewed coffee. I was given my own Aeropress brewer this morning by one of the friends I visited with at the coffee bar, so Drew, one of the Onyx guys, brewed up a cup on Aeropress to show me how the method works. Fascinating and quick. Coava Coffee has a great article describing the method, much more complete than anything I can offer, so read on here. Basically, it’s a oxygen/suction method, an efficient, quick, very portable brewing tool.

To make things all the better, we also enjoyed a VERY excellent cup of Coffee Collective’s Panama Esmeralda roast (you can read about it here…if you can read Danish). This coffee retails upwards of $60/12oz, so it’s definitely a SPECIAL cup. It’s roasted super-light (one of the lightest I’ve seen), so it has less of the bold coffee flavor that you might expect from a traditional Northwest coffee and much more tea-like, complex and balanced flavor. A bit expensive for my taste (and wallet) but fun to try.

Hope everyone’s enjoying the end of the blogging series. I’m pretty happy with how it’s turned out and with the diverse coffees I’ve had a chance to try. I’m excited to end out these next couple days, maybe trying out my new Aeropress and some Kona coffee I was given by a friend this morning. Thanks for joining this 30 day journey!
